Newari Khaja Set | Veg Choila, Bhatmas Sadheko, Aluko Achar, Bodi Fry

Veg Choila:

2 Cups Soya Chunks
Soak in hot water for 5-6 minutes
Heat 2 tbsp oil in a pan to fry the soya chunks
Fry till it becomes golden brown in color
4 garlic cloves
Small sized ginger
Dried chilies (soaked in warm water)
1 tsp Sichuan pepper (timur)
2 roasted tomatoes
Blend everything (you can also use hand blender)
Add salt as per the taste
Chopped garlic leaves
Chopped cilantro
½ lemon juice
Heat 1 tbsp mustard oil in a pan
1 tsp fenugreek seeds
1 tsp turmeric powder

Bhatmas Sadheko:

In a pan add 1 tbsp oil
Add 1 cup soyabean seeds
Sliced of garlic
Sliced of ginger
Chopped green chilies
Add chopped garlic leaves
Chopped cilantro
1 tsp red chili powder
Salt as per the taste
1 tsp mustard oil
1 tsp lemon juice

Bodi fry: 

Soaked and boiled black eye peas
Heat 1 tbsp oil in a pan
1 tsp fenugreek seeds
Add 1 small sized onion
3 green chilies sliced
1 tsp crushed ginger and garlic
1 tsp turmeric powder
1 tsp red chili powder
1 tsp cumin and coriander powder
Add boiled black eye peas
Salt as per the taste
Add chopped cilantro

Aaluko Achaar:

2 medium sized boiled potatoes
½ cup hemp seeds (bhang) or sesame seeds
1 tsp Sichuan pepper (timur)
Add 1 tsp red chili powder
Salt as per the taste
1 lemon juice
1 tbsp oil
1 tsp fenugreek seeds
1 tsp turmeric powder
4 green chilies sliced
Add chopped cilantro
